Fattoush is an Arabic Levantine bread salad made from toasted or fried pieces of pita bread combined with vegetables it belongs to the family of dishes known as fattat (plural) or fatta which use flatbread as a base. Sumac and lemon in the dressing give it is characteristic zesty fresh taste.

100ml Virgin olive oil

1 Lemon, juice & zest

½ Garlic clove, crushed

2 tsp. Sumac

Sea salt and freshly ground black pepper

1 Pitta bread, torn into small pieces

8 Plum tomatoes, seeds removed, quartered

Half Cucumber peeled, diced

Half Green pepper, diced

8 Radishes, sliced

1 Shallot, sliced

Small handful rocket leaves

Handful fresh mint leaves

Preparation method.

For the dressing, place the olive oil, lemon juice and zest, crushed garlic and sumac into a bowl and whisk together to combine. Season, to taste, with salt and freshly ground black pepper. (You will not need all the dressing for this recipe, so set the remainder aside in the fridge for up to a week.)

Tear up you Pitta bread into bit size pieces and fry them in a sauté pan in a little olive oil, season with salt and pepper and set aside to cool.

For the salad, place the cold toasted pitta, tomatoes, cucumber, pepper, radishes, shallot, rocket leaves, and mint leaves into a large bowl and season, to taste, with salt and freshly ground black pepper.

To serve, pour the dressing, to taste, over the salad and gently mix together to coat the salad evenly.
